Melibiose is a reducing disaccharide formed by an α-1,6 linkage between galactose and glucose (D-Gal-α(1→6)-D-Glc). It differs from lactose in the chirality of the carbon where the galactose ring is closed and that the galactose is linked to a different point on the glucose moiety. It can be formed by invertase-mediated hydrolysis of raffinose, which produces melibiose and fructose. Melibiose can be broken down into its component saccharides, glucose and galactose, by the enzyme alpha-galactosidase, such as MEL1 from Saccharomyces pastorianus (lager yeast).

Si presenta come polvere bianca, amorfa, ha potere dolcificante, è chimicamente riducente, ed ha attività ottica destrogira. A differenza del lattosio, che ha una giunzione glicosidica beta con il carbonio 4 del glucosio, la giunzione glicosidica è alfa con il carbonio 6 del glucosio. Si può formare attraverso l'azione della invertasi attraverso idrolisi parziale del raffinosio. Viene idrolizzata nei due saccaridi componenti dall'enzima , e dal MEL1 del Saccharomyces pastorianus.

  • Мелибиóза — органическое соединение, дисахарид, образованный с помощью α(1 → 6) гликозидными связями, между остатками D-галактозы и D-глюкозы (D-Гал-α(1 → 6)-D-Глю). Как и многие дисахариды, мелибиоза имеет кристаллическое строение, хорошо растворима в воде. Получается при гидролизе трисахарида рафинозы, от которой также отщепляется фруктоза. Гидролизуется с помощью фермента α-галактозидазы. Мелибиоза относится к восстанавливающим дисахаридам.
